Ajisaikan started operation in September of 1999 and with its HACCP control system, state of the art sterilization system and unique transfer system it is one of the best-equipped facilities in its industry.

Since this facility has an annexed production lab for soy sauce and miso based products and thus functions as a general factory, it was decided to construct it with a passageway for visitors to tour the factory.

This machine can suck up between 500 and 600kg of soybeans, naked barley, barley or rice and output various types of miso.
It is also capable of sorting the ingredients by size, quality, and color and can filter out unwanted objects such as stones. (Unfortunately this machine is not open to public viewing)

These spinning tanks immerse rice and barley in water to hydrate them.
One of the 4t tanks is used to immerse in and the other removes water.

Wide continuous rice steamer

This machine steams rice or barley by allowing steam from underneath to pass through a stainless steel netted conveyor belt.
It is possible to change the steaming time by adjusting the speed of the conveyor belt.
This machine is separated into various chambers, allowing adjusting the time in the initial steaming room and final steaming room to reach a perfect final product.
A computer regulates this process.

This machine minces the cooked soybeans from a tin (pressure vessel) into a paste.

The hopper at the end of the conveyor belt is where the produce is measured. Different types of soybeans, wheat and amount of salt require a computer analyzes different balances and this process.
Also this measurement method causes the cluttered beans to fall down first, which allows the computer to adjust the barley and salt according to the amount of cooked beans.

This stainless steel tank contains up to 2t of miso and under the watchful eye of the computer, the miso is allowed to ferment.

Packing room

Packing room

This packing room is a clean room and contains various machines in order to handle different types of packaging. It includes a gusseted bag sealer, cup filler, tetra pack filler and many other types of machinery.
The gusseted bag sealer and the cup filler can each handle up to 1000 packages an hour. (This clean room is not open to the public)
